Pumpkin Protein Muffins

Ingredients
2 Large eggs1 cup canned Pumpkin1 tsp vanilla extract 1/4 C Stevia 1-1/2 C vanilla protein powder1/2 tsp Baking Powder 1/2 tsp Baking Soda 1 tsp Xanthan Gum 1 tsp Cinnamon, ground 1/2 tsp Pumpkin Pie spice 1/4 tsp Salt
Directions
Mix wet ingredients. In a separate bowl mix dry ingredients. Combine both just until mixed.

Line a mini muffin pan then add dough. Top with pumpkin seeds if desired.

Bake at 350 degrees for 20 min.
