Simple Red Lentil Soup

0.5 tbsp Extra Virgin Olive Oil 0.5 serving Onion - Yellow (1 Cup) (by MATT_MILL) 0.5 small (5-1/2" long) Carrots, raw 0.5 cup Lentils 4 cup Swanson Chicken Broth 99% Fat Free 0.5 tsp Curry powder 0.25 tsp Lowry's Seasoned Salt (by SEANDEMOSS)
Saute roughly chopped onion in medium saucepan with olive oil.
Add diced carrot
When carrot begins to soften (about 5 min), add lentils and broth (option: add a bay leaf!)
Bring to a boil, stir, reduce heat and cover.
When lentils are beginning to fall apart, turn off eat, add curry powder and seasoned salt, stir well.
Remove bay leaf, if used, serve hot.
Serving Size: Makes one LARGE bowl
