Simple Chicken Soup with Orzo

11 cup Campbell's low sodium chicken broth 2 medium (2-1/2" dia) Onions, raw 8 clove Garlic 3 stalk, large (11"-12" long) Celery, raw 2 cup, pieces or slices Mushrooms, fresh 1.5 cup Peas, frozen .5 cup Orzo Pasta 6 ounces Chicken Breast (cooked), no skin, roasted 1 tbsp Extra Virgin Olive Oil
Heat Olive Oil
Saute garlic and onions (2 minutes)
Add celery (2 minutes)
Add mushrooms, peas, chicken (3 minutes)
Add broth, bring to boil
Add orzo, bring to boil again
Simmer, covered, 1 hour
Serve with a pinch of grated cheese or parmesan
Serving Size: Makes 8 meal sized servings
