Chicken Breasts with Creamy Mustard Sauce

Ingredients
1.5 pounds boneless, skinless chicken breast 2 Tbsp Olive Oil 1 14.5 fl oz Can Chicken Broth 2 Tbsp Cornstarch3 Tbsp Dijon Mustard 1 Tbsp Soy Sauce 2 Tbsp Milk1/2 Onion, finely chopped
Directions
Lightly season chicken with salt and pepper. Cook in hot oil in a large nonstick skillet over medium-high heat two minutes per side or until browned; remove from skillet, and keep warm. Add onion to skillet; sauté two minutes or until tender. Whisk together broth and cornstarch; add to skillet. Bring to a boil, and cook three minutes or until thickened, stirring constantly. Whisk in mustard, soy sauce, and milk. Add chicken; simmer five minutes or until chicken is done and sauce is thickened.
