Quinoa and bison stuffed peppers

3 clove Garlic1.5 cup, chopped Onions, raw0.5 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry1 lb Ground bison (buffalo)1.5 cup Hunt's Fire Roasted Diced Tomato6 Red or Green Bell Pepper
Boil the quinoa in a cup of water
Brown the bison then add onions and garlic.
When vegetables are translucent, add can tomatoes
Reduce the liquid by half then add quinoa.
Season with salt, pepper, cumin, cayenne and paprika.
Cut tops off of peppers and remove seeds and membranes, season the inside with salt
Stuff the mixture into the peppers bake at 350 for 45 minutes with a little water in the bottom of the pan to prevent burning.
