Winter Wonderland Soup

Ingredients
5 lbs Chicken Legs, ready to cook1 lb Carrots2 sm Onions1 lb Rice5 cloves Garlic2 tsp Salt2 tsp Pepper
Directions
Boil chiken in 12 cups of water until chicken is very tender. Remove chicken, save broth in pan. While chicken is cooling, add salt, pepper, and garlic and rice. Chop onions and carrots and add to broth. Bring to a boil and reduce heat. While broth is simmering, debone chicken and remove skin. Tear into small pieces and add to soup. Cook untill rice and veggies are tender.

    Very good, got full on one serving with 6 whole wheat saltines. I used brown rice instead of white to make it a little bit healthier. It was very tasty. Our 8 year old granddaughter had 1 1/2 servings, ate every bite and wanted to take home some of what was left! And she doesn't like soup! - 9/2/07
