Ingredients
*Better 'n' Eggs egg substitute, 3 cups * Cheddar Cheese, 1 oz * Swiss Cheese, 2 oz * Ham, extra lean, (5% fat), 1 cup, diced * Red Ripe Tomatoes, 1 cup, chopped * Mushrooms, cooked, 1 cup pieces * Pam cooking spray
Directions
pour egg substitute in hot pan [pam even if no stick pan], after about 3 minutes add mushrooms and cheese...reserve 2 tablespoons of cheese, cover for about 10 min on medium to low heat. add tomatoes and fold over or stir [your preference]. add the rest of the cheese and serve on a warmed plate. garnish with your favorite fruit.
