Vegetarian Stuffed Peppers

4 cup, strips Green Peppers (bell peppers) 4 flowerets Cauliflower, cooked 1 cup, shredded Cheddar Cheese 3 serving Amys Light & Lean Spaghetti & Meatless meatball .5 cup, chopped Onions, raw
-Remove tops and inside of 4 large peppers.
-Chop half onion.
-Boil peppers for 3-4 minutes.
-Soften chopped onion and garlic in Olive oil. Add veggie crumbles (and lime juice/chili powder).
-Roughly chop cauliflower florets (in place of rice) and blend until size of rice.
-Add cauliflower to peppers, top with "meat" mixture and cheese (plus tomato)
Serving Size: Makes 4 Stuffed Peppers
