Keto Chocolate Caramels

Ingredients
48 tsp Tagatose (Sensato) 48 tsp Vitafiber powder 24 tsp Vitafiber liquid .75 cup Cocoa, dry powder, unsweetened 6 fl oz Heavy Whipping Cream .5 stick Butter, salted 1 tbsp Vanilla extract, imitation, alcohol
Directions
add all ingredients except vanilla in medium-sized pot over medium-low heat. stir as it gently melts. when it is all melted and thoroughly combined, turn the heat up to medium or slightly higher. Keep stirring occasionally until the heat reaches 238 F. Remove from heat, add vanilla and beat for ten minutes. Pour into buttered 9X13 pan. Refrigerate for at least four hours, but they're better overnight. You can cut them into squares if you immediately remove them and individually wrap them, but if you leave them in the container, they end up sticking back together.
