Healthy Beef Stew for Slow Cooker

2 pounds beef stew meat, cut into 1 inch cubes1 Tbsp all-purpose flour1/2 tsp salt1/2 tsp ground black pepper4 cloves garlic, minced1 bay leaf1 tsp paprika1 tsp Worcestershire sauce1 onion, chopped1/2 cup red wine1 1/2 cups reduced-sodium beef broth3 potatoes, diced4 carrots, sliced1 stalk celery, chopped3/4 pound butternut squash, peel and cut into small chunks1/2 head escarole, washed and torn into bite-sized pieces
Place beef in slow cooker.
Mix together flour, salt and pepper in a small bowl.
Pour over meat and stir to coat.
Stir in all remaining ingredients except for escarole.
Cover and cook on low for 10 to 12 hours or on high for 4 to 6 hours.
Stir in escarole.
Cover and cook until escarole is tender, 15 to 20 minutes.
Serving Size: 6
