Green chile and cheese hoe cakes

Ingredients
16.0 tbsp Alber's Yellow Corn Meal1.0 cup Flour - Gold medal all purpose flour1.5 cup Great Value Finely Shredded Fiesta Blend Cheese2.0 tbsp signature kitchens mild diced green chiles1.0 tbsp Butter, 4.0 tbsp Lard0.5 tsp Salt3.0 large Egg, fresh, whole, raw3.0 tsp Baking Powder2.0 cup Yellow Sweet Corn, Canned
Directions
Combine dry ingredients and mix well Add cheese and mix well Open cans of chile and corn and dump them on dry ingredients without draining. Melt butter and Lard in the skillet you will be using to fry the cakes in. Mean while beat the eggs and add them to the other ingredients gently and quickly don't worry about lumps or even distribution at this point. Add the melted butter and lard to the bowl and finish mixing. Be careful not to over mix but be sure all ingredients are incorporated. You may need to add a little water to get a batter just a little thicker than you would or all wheat pancakes. Scoop batter into hot frying pan 1/3 of a cup at a time cooking until bottom is brown and top is bubbly. Flip and cook until top is browned and crisp.
