Ingredients
4 cup Kabocha Squash (Japanese Sweet Squash) (by HEALTHIERANN66) 1 medium (2-1/2" dia) Onions, raw 3 1tsp Coconut Oil 3 tsp Garlic 3 tsp Ginger Root 1 pepper Jalapeno Peppers 3 cup Vegetable Broth 1 cup Silk coconut milk unsweetened 1 tsp Garam Masala Indian Spice Mix (by BIGGIRL2082010) 1 tsp Cumin seed 1 tsp Coriander seed
Directions
roast the squash (375 oven for 40 minutes)
saute onions in coconut oil
add garlic, ginger and spices
add vegetable broth & coconut milk
bring to a gentle boil, add squash simmer for 20 minutes
Use immersion blender to mix
serve

    Easy and Delicious. I got out my potato masher instead of pureeing for more texture. - 6/27/18
