Mashed Butternut Squash

1 tsp Margarine, soft 2 cup Baked Butternut Squash 2 tsp Granulated Sugar
Bake squash in oven: Cut squash in half, remove seeds, rub with a little vegetable oil all over. Put on cookie sheet cut side down and bake at 350* for half an hour, turn over and bake another half hour or until soft.
Remove squash from skin and stir in the margarine and salt (careful as this is very hot)
Serving Size: 4 1/2 cup servings
