Real Simple Tomato Soup (w/o Parmesan and Croutons)

4 cup Kitchen Basic Vegetable Stock (by AGAINSTTHEWIND) 3.5 cup Tomatoes, red, ripe, canned, whole, no salt added 2 medium (2-1/2" dia) Onions, raw 2 tbsp Olive Oil
Cook 2 chopped onions in 2 tbsp. olive oil with 1/2 tsp. kosher salt in a large pot over medium , stirring occasionally, until softened, 4 to 6 min. Add 1 28-oz. can whole peeled tomatoes (with their juices), 4 cups vegetable stock/broth, and 1 tsp. dried oregano. Simmer until beginning to thicken, 10 to 15 minutes. Puree in a blender. (Optional: Top with 1 c. croutons and 2 oz. shaved Parmesan cheese.)
