Vegan Tofu Stir Fry

1/2 cup Tofu, firm 1/2 green bell pepper, chopped1/4 red bell pepper, chopped1/4 orange bell pepper, chopped1/4 yellow bell pepper, chopped1/2 yellow onion, chopped1 Tbsp Coconut Oil1 Tbsp Soy Sauce1 cup steamed White Rice
Cut tofu into thin slices. Season with pepper and other favorite seasonings. Set aside. Cut peppers and onion into chunks; add to pan with hot coconut oil.
Add tofu and soy sauce, allow to cook over medium heat approximately 3-4 mins. Flip tofu and stir vegetables. Cover lightly and allow to cook 3-4 more minutes. Using spatula, cut tofu into bite size pieces, and cook for a few more minutes until all pieces are golden brown.
Serve over white rice.
Serving Size: Makes 1 2-cup serving
