Spicy Chicken Burgers

Ingredients
Ingredients90g / 3.5 oz instant mashed potato granules225g / 8 oz cold, cooked skinless chicken, shredded1/2 small onion, chopped finely1 tsp dried mixed herbs1 tbsp taco seasoning / sauce1 tbsp BBQ sauce / brown fruity sauce4 tbsp breadcrumbs2 tbsp sunflower oil
Directions
Prepare mashed potatoes according the instructions. Allow to cool slightly.
Put chicken, onion, herbs, taco seasoning and BBQ / brown sauce into a large bowl.
Mix well to combine, then stir in mashed potato.
Put breadcrumbs onto a large plate.
Shape the chicken mixture into 8 burgers, pressing together firmly.
Dip the burgers into the breadcrumbs and carefully turn over until evenly coated.
Heat the oil in a large non-stick pan. Add the burgers. Cook for 8 - 10 minutes, turning once, until golden.

    I think this surprised my husband more than me. Was very good with ranch dressing. I do not care for super-hot and spicy, but, I thought this could use more heat to it, and we used homemade taco seasoning mix used with "medium" heat chili powder. - 12/20/08
