Czech Potato Dumplings & Kraut

Ingredients
1 1/2 lbs Russet Potatoes4 large Eggs2 T Butter, melted1 cup Flour, unbleached all-purpose 1 1/2 tsp salt1 15 oz can of Sweet Kraut4 T Butter
Directions
1. Boil potatoes in skins about 15 min. - drain - cover pan and cool about 15 min. - remove skin - mash coarsely. Stop when lumpy.
2. Pour melted butter over potatoes.
3. Break eggs over potatoes.
4. Sprinkle with salt - Stir with wooden spoon until mixed.
5. Add flour 1/2 C at a time - you may need to combine with your hands.
6. Coat your hands with butter and form 8 dumplings - slightly larger then a large egg.
7. Place on waxed paper - Drop 4 dumplings into large pan of boiling water about 4 inches deep.
8. Lower heat to medium maintaining boil - dumplings will drop to bottom of pan - boil slowly 10 to 15 min until dumplings rise to the top and float - remove with slotted spoon to a greased casserole dish with a thin layer of Sweet Sauerkraut.
9. Layer Dumplings & Kraut - Dot top with butter.
10. Cool and cover to be reheated next day OR serve immediately.
