Basic European Pancakes

* Flour, white, 1.75 cup* Egg, fresh, 4 large* Granulated Sugar, 3 tsp* Salt, 1 dash* Milk, 3.25%, 1.5 cup* Butter, unsalted, 3 tbsp (soft)Optional: fruit, powdered sugar, molasses or maple syrup (not included in recipe calculation, so you'd have to enter the calories separately)
In a mixing bowl make a fairly liquid batter out of flour, sugar, eggs, milk, a dash of salt and 2 tbsp of the butter.
Heat a dab of the remaining butter in a low-sided frying pan - i personally like to use an iron skillet, but a non-stick pan will be useful if you want to scrimp on the butter for baking.
Now bake the individual pancakes adding just enough batter to the pan each time to cover the bottom of the pan evenly.
Now would be the moment to "individualize" your pancake - i like to put thin apple slices on mine, but they are not included in this "basic" recipe. But if you would like to try this you can now evenly embed some apple slices into the not-set batter.
Once the underside is set and lightly browned, turn over the pancake with a wide spatula. This can be a challenge with a large pancake like this, but you'll get the knack soon.
Allow the other side to brown lightly and you are done.
You can dust the pancakes with some powdered sugar, depending how sweet you'd like them to be, or you could have them with molasses or maple syrup, it's up to you.
Recipe should yield 6 about 8" pancakes, but i cannot guarantee that you'll stop eating after one.
