Baja Egg Salad

6 hard boiled eggs, peeled and chopped2 green onions, chopped1/2 cp green chile pepper1 red pepper, chopped1 clove garlic1/2 cp grated cheddar cheese1/2 cp light mayo2 tbs. lemon juice1 tsp. ground cumin1 tsp. chili powder
1. Place eggs, green onion, green chile, red pepper, garlic and cheese in a medium bowl, toss gentle.
2. Mix mayo, lemon juice, cumin and chili powder in a small bowl.
3. Fold the mayo mix into the egg mix
4. Refrigerate several hours to allow the flavor to blend.
