Macaroni Salad with Bacon, Peas, and Creamy Dijon Dressing

Dressing:1/2 cup (4 ounces) 1/3-less-fat cream cheese1/4 cup chopped shallots1/4 cup reduced-fat mayonnaise4 teaspoons Dijon mustard2 tablespoons lemon juice1 tablespoon white wine vinegar3/4 teaspoon black pepper1/2 teaspoon kosher salt Salad:8 ounces uncooked large elbow macaroni2/3 cup fresh green peas2/3 cup finely diced red bell pepper1/4 cup thinly sliced green onions1/4 cup chopped fresh flat-leaf parsley4 lower-sodium bacon slices or turkey bacon, cooked and crumbled
To prepare dressing, combine all the dressing ingredients in a food processor, and process until smooth. Cover and chill.
To prepare salad, cook pasta according to package directions, omitting salt and fat; add peas during the last 3 minutes of cooking time. Drain; rinse with cold water. Drain. Combine the dressing, pasta and the remaining salad ingredients. Cover and chill until ready to serve.

Tip: Make this 24 hours in advance. When I made this recipe and tasted it, I thought it was awful - all I tasted was shallot. But I decided not to panic and put it in the fridge overnight to give the flavors time to combine. By morning it tasted pretty good and by that night it was great! - 7/22/10
