Gingerbread Truffles

Ingredients
16 serving Nabisco gingersnaps (4 cookies) 8 oz Neufchatel Cheese 19 tbsp Almond Bark Vanilla Flavored Coating (Plymouth Pantry) (by 2JJOHNSON)
Directions
Grind gingersnaps and mix with neufchatel. Form 1 inch balls and refrigerate for 1/2 hour. Melt chocolate in double boiler. Dip and chill.
