Coconut Fruit Bites

Ingredients
1 cup, pitted, chopped Dates 1 cup, halves chopped Apricots, dried 1 cup, packed Raisins 1 cup, fine chopped Walnuts 1 cup, shredded Coconut, raw 1 cup, shredded Coconut, raw 2 tbsp Dark Corn Syrup
Directions
1) Finely chop the walnuts.
2) In a food processor, grind the chopped dates, chopped apricots, and raisins with the corn syrup.
2) In the processor, add the walnuts, and 1 cup of the coconut. Pulse to mix.
3) Place the mix in a bowl, and roll into 1 inch balls. Roll the balls into the second portion of shredded coconut. Place on a tray, and let set for about 1/2 hour, then pack into an airtight tin, between layers of Saran wrap. Stores well in the freezer.
