Rhubarb Custard Pie

3 cups rhubarb, chopped1 1/2 cups sugar1 T. butter1/2 t. nutmeg3 T. flour2 eggs beaten
Preheat oven to 450. Mix sugar, butter, nutmeg, flour and eggs until frothy. Add rhubarb. Pour into pie shell. Bake 10 minutes at 450. Reduce heat to 350 and bake and additional 50-60 minutes or until a knife inserted into the center comes out clean. Cool completely.

This was very easy to make and very good. Added a few raspberries to the top before baking and it was very pretty as well. I would probably cut back a bit on the sugar if your rhubarb isn't super tart. My husband won this for beating me at a yard game. The guys devoured it. Thankyou! - 7/5/08
