8.0 tbsp Smucker's Sugar Free Apricot Preserves3.0 tbsp Kikkoman Less Sodium Soy Sauce2.0 tbsp Essential Everyday Pure Canola Oil1.5 lb Pork, fresh, loin, top loin (chops), boneless, separable lean and fat, raw4.0 clove Garlic4.0 cup, chopped Broccoli, fresh140.0 gram(s) bell pepper, red, sweet, raw4.0 oz Eat Smart Snow Peas
Whisk preserves and soy sauce together in a bowl until smooth. Thinly slice pork and pepper. Mince garlic.
Heat 1 tablespoon of the oil in a large nonstick skillet over high heat. Add pork and cook, stirring frequently, until lightly browned and no longer pink, about 5 minutes. Transfer to a plate.
Add remaining oil and garlic to the same skillet; cook over medium-high heat for 30 seconds. Add broccoli, pepper, and snow peas and cook until veggies are crisp-tender, about 3 minutes. Put the pork back in and stir in the preserves mixture; cook 1 minute more. Serve hot.
