Mediterranean Roasted Beet Salad

Ingredients
3.0 beet (2" dia) Beets, fresh1.0 clove Garlic0.25 cup, chopped Onions, raw0.25 cup Parsley2.0 tbsp Balsamic Vinegar2.0 tbsp Extra Virgin Olive Oil
Directions
Preheat oven to 325. clean and dry beets, lightly coat beets and roasting pan with oil. Roast beets for 2-3 hours till beets are tender. Let beets cool. once able to handle peel skins from beets and cube them. Toss the beet cubes in a bowl with chopped parsley, onion, and garlic. blend olive oil and balsamic with red pepper flakes. drizzle over beets. salt and pepper to taste. Serving Size: serves between 3-4
