Sweet Potato Black Bean Burgers

Ingredients
* Beans, black, 2 cups, Cooked or Canned * Sweet potato, 1 cup, grated * Almond Butter, 1/2 cup * Red Onion, 1/2 cup, diced * Whole Spelt or Other whole Grain Flour, 1/4 cup * *Soy Sauce, 2 tbsp * Garlic, 3 cloves * Ginger Root, 1 tsp
Directions
1. Drain and rinse the black beans, place them in a medium bowl and mash. Stir in the remaining ingredients. If batter is very wet, add additional flour.

2. Scoop 1/3 cup of batter at a time to form individual burger patties. Heat a cast-iron frying pan on medium heat, add a bit of oil and fit in a few burger patties. Fry each burger for 7 to 10 minutes on one side, then flip over and fry an additional 5 to 7 minutes, or until the centers of the burgers are cooked through. If they brown too quickly, turn the heat down a bit.

3. Serve HOT!! with condiments of your choice (guacamole and salsa are great)
