Danny Seo's Coconut Poached Salmon

Ingredients
1 lb Salmon cut into 4 fillets2 cup Coconut Oil
Directions
In a saucepan, heat coconut oil up to 225 degrees. (Note: Oil should not come up to more than halfway up the sides of the salmon filets.)
Add salmon and poach until it's light pink in the center, 6-8 min.

Serve on top of salad or with your favorite side dish.
