Tofurkey chorizo and potato tacos

0.50 tbsp Vegetable Oil 2 potato (2-1/3" x 4-3/4") Baked potatoes0.5 cup Red Onion Raw, sliced into slivers1 package of Tofurkey Chorizo style
Bake potatoes in the microwave. Chop into small cubes.
Slice onion into slivers. Saute in oil until aromatic. Add chorizo and heat until hot, stirring until blended. Add potato and stir well.
Heat tortillas over a burner to heat up and even char each side a bit. If you don't have gas heat, any pan will do to heat them!
Fill tortillas and eat!
Serving Size: Makes about 14 tacos.
