Baked Zucchini with Feta

300 grams Zucchini 1 small Onion, diced30 grams Low Fat Feta Cheese1/2 tbsp Extra Virgin Olive Oil 1 medium tomato, diced
Cut zucchini into quarters, scoop out seeds and reserve. Bake zucchini shell in oven for 10 minutes. Saute onion in oil, add reserved zucchini and tomatoes, add pepper to taste. Remove from heat and add crumbled feta. Fill zucchini shells with feta mixture, and bake for a further 5-10 minutes. Top with breadcrumbs if desired.
