Carolyn's Black-Eyed Pea Salad

Ingredients
Olive Oil, 1 cup Onions, raw, 1 cup, chopped Celery, raw, 2 stalks, choppedGarlic, 4 cloves, mincedZucchini, 1 cup, shredded*White Rice, medium grain, 4 cupChicken Broth, 4 cup Black-Eyed Peas, 1 1/3 CupParsley, .5 cup
Directions
Heat Olive Oil on medium high heat. Add Onion, Celery and Garlic and saute until translucent.

Add Zucchini and continue to cook 1 minute.

Add rice and stir, then add chicken broth and bring to a bubble. Once you see it bubble cover and turn heat down to a simmer for 25 minutes.

Add Black-Eyed Peas and cook for 5 minutes.

Turn off heat and add parsley and stir.

You can serve this dish hot, but it is terrific at room temperature.
