Cauliflower fried rice

Ingredients
1 head, large (6-7" dia) Cauliflower, raw 1 package (10 oz) Peas and carrots, frozen 2 large Egg, fresh, whole, raw 2 small Onions, raw 3 tbsp Soy Sauce 2 1tsp Sesame Oil 3 chicken breasts
Directions
Chop cauliflower to rice size pieces. Cook chicken in sesame oil, add everything else. Stir. Make a hole in center and drop in beaten eggs. Once they are cooked stir them in and add soy sauce.
