Ingredients
8 serving Deli, Thin 'n Trim Sweet Italian Chicken Sausage (1 link) (by NANASAMM) 1 cup, chopped Onions, raw 1 cup, diced Celery, raw 1 cup diced Potato, raw 1 package (10 oz) yields Spinach, frozen 1 tsp (C) Garlic, minced (by SHEILAHARVILLE) 4 serving Broth, chicken: College Inn, Light & Fat Free, 50% less Sodium, Chicken Broth, 1 cup/serv 3.5 cup Ragu Traditional Spaghetti Sauce (tomato sauce) 2 cup Half and Half Cream 1 cup Cheese - Sargento Reduced Fat Shredded Mozzarella Cheese (by BOOBILYBOO)
Directions
In large saucepan, cook and stir sausage, onion, celery and garlic over medium heat until onion is tender and sausage is no longer pink, about 5 minutes. Drain.
Stir in broth, potatoes and sauce; heat to boiling over high heat. Reduce heat and simmer, stirring occasionally, for 10 minutes or until potatoes are tender. Return to boiling.
Stir in heavy cream.
Stir in cheese and spinach; reduce heat and simmer for 2 minutes or until cheese is melted and spinach is heated through.
Makes 8 servings.
