Low Carb Chicken casserole

Ingredients
2 lb boneless, skinless chicken breast 8 oz Cream Cheese 4 tbsp Butter, salted 4 tbsp Heavy Whipping Cream 2 tbsp chopped Onions, raw 1/2 cup roasted red pepper, chopped4 tbsp Parmesan Cheese, shredded 1 cup Colby and Monterey Jack Cheese shredded red pepper flakes, optional1 serving Pepper, Bell fresh (Green, Red, Yellow or Orange) 1/2 a pepper (by THECAT1964)
Directions
Preheat oven to 375
Grease 9x13 pan and lay chicken in without overlapping
Combine cream cheese, whipping cream, butter and onion
Spread evenly over chicken
Sprinkle roasted red pepper over, then cheddar and finally the parmesan
Add red pepper flakes, optional
Bake uncovered 45 min.
Let sit for 5 min. before serving
