Thai Chicken Tortillas

Ingredients
2 lbs Chicken, cubed and cooked4 tbsp Salsa4 tbsp honey2 tbsp sesame oil2 tbsp soy sauce2 tbsp vinegar3 green onions, minced1/2 c. creamy peanut butter1 cucumber, diced4 tomatoes, diceddiced mushrooms (optional)thinly sliced lettuce
Directions
Cube and cook chicken and set aside.
Blend everything except tomatoes, cucumbers, and any other veggies you want to add.
Add warm cooked chicken to sauce and blend. Add tomatoes, cucumbers, and mushrooms and blend. serve warm over rice, or on tortilla with shredded lettuce. Makes approximately 8 1-cup servings. Makes great leftovers, warmed or cold (like a salad), but I would leave out the mushrooms.

    This was AWESOME! I made this for 2 people, though, and cut the pb to 1 TBS and the sesame oil to 1 tsp to keep the recipe lower in fat. - 1/29/08
