Swiss Turkey Cutlet

1 pound turkey breast tenderloin (cutlets)1 cup chicken broth1/4 cream (half & half is ok, whatever you have)2 Tablespoons rice flour (I've used reg. flour also)1/8 tsp. black pepper2 ounces swiss cheesse1/2 cup green bell peppers, cut into thin strips2 slices smoked ham, cut into thin strips
Makes 4 serviings.
In a large skillet, over medium heat, bring turkey and chicken broth to a boil. Cover and simmer 10 minutes or until no longer pink in center. Remove turkey, set aside. Strain broth, if desired.
In a small bowl, mix cream, flour & pepper throughly. Stir mixture into broth,. Stirring over medium-high heat, bring to a boil and boil 3 minutes.
Add cheese and whisk until cheese melts.
Add green pepper, ham, and cooked turkey to sauce.
Reduce heat to low, cover, and summer 5 - 10 minutes until green peppers are tender-crisp.
Serve with sauce over turkey.
