Confetti Cole slaw

3 cups shredded cabbage or coleslaw mix (For more colors use red and green cabbage)1 cup coarsely shredded carrots 1 cup diced fresh pineapple1/4 red bell pepper shredded 1 teaspoon celery seeds 1/2 cup low-fat mayonnaise 1-2 Tablespoons fresh lime juice 1/2 red apple (such as Braeburn) shredded 1/2 teaspoon sea salt 1/2 teaspoon black pepper, freshly ground 1/2 teaspoon cayenne 1 Tablespoon honey NOTES: For less sodium, omit sea salt. You can also use Splenda or sugar substitute for honey.
In large bowl, place shredded apple with peel and lime juice. Toss.
Shred and mix vegetables and other fruits with the apple.
Mix mayo, honey, and spices in a measuring cup. Add more lime juice if you want it thinner.
Pour over slaw and toss well.
Chill at least 30 minutes before serving.
Toss again to blend.
Garnish with thin strips of red pepper, carrots, parsley, herbs, and/or green stuffed olives.
