Zucchini Feta Cakes

2 cup, sliced Zucchini 16 oz Athenos Feta Cheese 16 oz Japanese Panko Breadcrumbs, 4C Brand 0.25 cup, chopped Onions, raw 2 large Scrambled Egg
Grate zucchini- squeeze out water
Combine ingredients in bowl and mix
Measure 1/4 cup pattie and put into a frying pan with cooking spray. Cook 2-3 min then flip and cook 2-3 min. Only flip one time - pattie will be very fragile.
Alternatively - spray muffin tin and broil until browned without flipping. Squeezing out enough water from the zucchini is key to success for this recipe.
Serving Size: Makes ~9 cakes (1/4 cup each)
