2 serving Tomatoes, Roma, Fresh, 1 Med 3 tsp Garlic 1 cup, fluid (yields 2 cups whip Heavy Whipping Cream .5 cup (8 fl oz) Chicken Broth 56 gram(s) Cheese, Frigo Shredded Parmesan Cheese (1/2 cup) 1.5 cup Spinach, fresh 1 serving 2 tsp Italian Seasoning (by JULIE1933) 2 1tsp Olive Oil 24 oz Chicken Tender, raw (by LITHIUM771) 1 cup, pieces or slices Mushrooms, fresh
1. In a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center.
2. Remove chicken and set aside on a plate.
3. Add mushrooms, seeded roma tomatoes sliced thin, and minced garlic (add more olive oil if necessary) cook until mushrooms and tomato are cooked through
4. Add the heavy cream, chicken broth, garlic powder, italian seasoning, and parmesan cheese. Whisk over medium high heat until it starts to thicken.
5. Add the spinach and let it simmer until the spinach starts to wilt.
6. Add the chicken back to the pan and serve over pasta if desired.
