Quinoa Patties (Gluten Free)

Ingredients
0.5 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry (you'll need about 2 and 2/3 C cooked)4.0 large Egg, fresh, whole, raw0.5 large Onions, raw0.33 cup Parmesan Cheese, grated0.75 cup Yellow Cornmeal0.5 cup, chopped Carrots, raw0.5 cup, sliced Zucchini3 cloves fresh garlicSaltPepper
Directions
Cook quinoa and set aside to cool. Slice carrot, zucchini, and onion and peel garlic. Add all vegetables and garlic to a food processor and pulse until everything is well chopped into small pieces. Place chopped vegetables into large bowl and add cheese, cooked quinoa, cornmeal, and eggs. Mix well. Season to taste with salt and pepper. Heat a nonstick pan over medium high heat with a small bit of oil. Form your mixture into small patties and cook until brown on each side. Serve with ranch dressing, buffalo sauce, hot sauce, avocado, Greek yogurt, a mixture of any of these or any other topping of your choice!
