2 cups brown rice2 lg sweet potatoes (or 3 small)1.5 cups low-fat soy milk1 tsp vanilla1 tsp cinnamon1/2 tsp nutmeg2 tblsp maple syrup
Rinse sweet potatoes and stick in oven for an hour until some sticky juices have oozed out so you know they are done. When cooled the peel will come right off. Steam the brown rice until done. Place cooked potatoes and rice into food processor. Blend, adding soymilk to desired consistency. Add other ingredients and blend. Enjoy hot, warm or chilled.
