Ingredients
1.0 large Egg, fresh, whole, raw23.0 Grams Butter, unsalted0.25 cup Milk, nonfat3.0 tbsp Sunflower Oil67.0 Grams Carrots, raw510.0 Grams Eggplant, fresh50.0 Grams Mushrooms, fresh210.0 Grams Onions, raw250.0 Grams Zucchini150.0 Grams Peppers, sweet, red, fresh95.0 Grams Red Ripe Tomatoes8.11 oz Beef, ground, 80% lean meat / 20% fat, patty, cooked, broiled [hamburger, ground round]70.0 gram(s) Feta Cheese (Tre Stelle, light feta)0.25 cup Tomato Sauce2.0 tbsp Parmesan Cheese, shredded
Directions
Cook the meat, add tomato sauce, season & set aside. Roast the eggplants after slicing & seasoning them. Chop all veggies including the eggplant slices. Stir fry all cubed veggies in the butter & a little oil & seasonings of choice. Layer half the veggies, then the beef mix, then the other half of veggies. In a blender add the feta, seasoning, egg & the parmesan. Top the veggies, bake until golden & serve. Serving Size: Makes 8 generous portions
