16 oz Ground chicken8 oz Low-moisture Part Skim Mozzarella Cheese 0.5 cup Parmesan Cheese, grated 1 large Egg, fresh, whole, raw 2 serving Pork Rinds, crushed to bread crumb texture1 tbsp Onion powder 0.5 tbsp Garlic powder1 tbsp Italian seasoning
It's dinner time! Low carb chicken parm stuffed meatballs. Amazing.
1lb ground chicken
1 tbsp onion powder
.5 tbsp garlic powder
1 tbsp Italian seasoning
1 egg
1/2 cup Parmesan cheese
8 oz mozzarella cheese cut into 1oz squares
2 oz pork rinds, crushed to breadcrumb texture
Preheat oven to 350. Combine chicken, Parmesan, spices and eggs. You will have a very wet mixture. Divide into 8 even parts. Wrap each part around one of your mozzarella squares, ensuring cheese is completely covered, forming into a ball. Then roll the chicken ball in the crushed pork rinds and place on a foil lined baking sheet lightly sprayed with non-stick. Bake at 350 for 25-30 minutes. Serve with your favorite low carb tomato sauce. Just under 2 carbs per meatball.
*note: to avoid cheese oozing out of your meatballs during baking, freeze the cheese cubes before forming meatballs.
