Gracie's Chicken & Rice Soup

3 medium Carrots, diced1 medium Onion, diced 3 stalks Celery, diced 6 tbsp Flour 6 tbsp Butter1 tsp minced garlic8 cups Chicken stock 1/2 cup White Rice, long grain 18 ounces Chicken Breast, cookedsalt and pepper to taste
Melt butter in stock pot over medium heat-high heat. Add the carrots, onion, celery and rice. Cook, stirring occasionally, until onions are translucent, about 7-8 minutes. Add the flour and minced garlic and mix well. Cook for 1-2 minutes, making sure to scrape the bottom of pot. Add in the chicken stock and bring to boil. Continue to simmer, covered, for 10 minutes. Add the cooked chicken and cook for 5 minutes longer. Add salt and pepper to taste.
