Vegetarian Black Bean Enchiladas

Ingredients
100 grams Cilantro, raw .50 cup Green Giant Whole Kernel Sweet Corn .5 serving 1 Med. Green Bell Pepper 1 cup Diced Tomatoes and Green Chiles (Casa Mamita) .50 cup Colby Jack Monterey Cheddar Cheese (bakers & chefs) 1 cup Beans, black .25 cup, chopped Onions, raw
Directions
Dice bell pepper, onion and chop cilantro.
Rinse beans
Place corn tortillas on bottom of casserole dish, add beans, corn and onion and tomato/chiles. Sprinkle cheese. Add enchilada sauce.
Repeat until finished with ingredients. Sprinkle top with cheese and bake 40 minutes.
Sprinkle some cilantro over top for garnish.
