LCHF Loaded Cauliflower Casserole

Ingredients
2 cup (1" pieces) Cauliflower, cooked 8 oz Cream Cheese 3 medium (4-1/8" long) Scallions, raw 4 tbsp Heavy Whipping Cream 1 cup Aldi's Happy Farms Shredded Mild Cheddar Cheese (1/4 C) 1 cup Cheese, Mozarella, shredded low moisture part-skim, Crystal Farms 8 tbsp Hormel Bacon Bits
Directions
Steam cauliflower. While cauliflower is steaming, combine all other ingredients (reserve 2 ounces of each cheese for topping) and cream with hand mixer or creamer. Add salt, pepper and garlic powder to taste. Once cauliflower is tender, drain off water and add to mixture and stir well. Combine cauliflower and mixture together and place in a 2-3 quart casserole dish. Sprinkle remaining cheese on top and sprinkle paprika on top (optional). Cover with aluminum foil and bake at 350 for 25 minutes. Remove foil and broil until cheese reaches it's desired brownness for your taste (3-5 minutes).
