4 Chicken Breasts, skin and bones removed.4 oz. White Wine1 T. Extra Virgin Olive Oil1 c. Chicken Broth, fat free1/4 c. Lemon Juice4 T. CapersSaltPepper
Flatten chicken breasts about 1/4" thick. Salt and Pepper chicken. Slice chicken into 1" strips. Add Olive oil to non-stick pan. Gently cook chicken on medium heat until cooked through, try not to brown the chicken too much. Once cooked remove chicken from pan. Turn heat to low add white wine and chicken broth scrapping any bits from the pan. Add Lemon Juice. Check for taste then add chicken and capers in sauce to warm. Serve with wild rice and broccoli.
