Decadent Double Chocolate Cupcakes

1 box Pillsbury Reduced-Sugar Chocolate Cake Mix1 16 oz. package silken tofu, drained1 egg1 teaspoon baking extract of your choice such as vanilla, cherry, almond, mint, etc. 1 cup chopped jumbo semi-sweet chocolate chips, chopped1/2 cup pecans, chopped and toasted
Preheat oven to 350 degrees. Prepare a 12-cup muffin pan by lining with paper liners and spraying cups with nonstick spray.
In the bowl of an electric mixer, beat tofu, egg and baking extract until smooth and nearly lump-free. Add dry cake mix and beat 5 minutes to achieve good volume. By hand, fold in chocolate chips and nuts. Divide evenly into muffin pan, tins will be very full. Bake for 25 minutes and serve unfrosted.
