Whole30 Sausage & Egg Cups

Ingredients
1/2 medium green bell pepper (diced)4 medium scallions (diced)2 cups cubed sweet potatoes3 links Aidells Chicken and Apple All Natural Sausage (cubed)8 large eggs1 tsp Trader Joe's ghee
Directions
Saute pepper, scallions, sweet potatoes, and sausage in ghee. Cook until potatoes are fork tender. Spoon into lined muffin tins. It is okay if they are heaping full. Carefully pour in beaten eggs until each cup is full. Bake at 350 for 20 minutes.
