1 pound ground turkey1 packet low sodium taco seasoning1 packet dry ranch dressing mix2 cans pinto beans (drained)2 cans kidney beans (drained)2 cans corn (do not drain)1 can diced green chilles (do not drain)2 larger sized cans (not the huge ones) of diced tomatos (do not drain)
cook turkey and taco seasoning like you normaly would for tacos. In other words follow the directions on the taco seasoning. While that is simmering dump all the other ingredients into a large stock pot and begin warming it together. Make sure to include the ranch dressing packet. Once meat is done add it to the stock pot and continue warming until hot. This does not need to simmer all day, it's a very quick meal. And just like chili it gets better the next day! You can serve it with baked tortilla chips and low fat or fat free sour cream and it's delicious.
