Real Texas Queso

Ingredients
2 tbsp Butter, salted .5 medium (2-1/2" dia) Onions, raw 2 pepper Jalapeno Peppers 4 clove Garlic .125 cup Flour, white 1 cup Milk Whole Vitamin D 0.125 cup Tomato Paste 3 cup Cheddar Cheese, Kroger shredded Sharp Cheddar 2 cup Colby and Monterey Jack Cheese shredded 150 grams Cilantro, raw .5 cup Sour Cream
Directions
Melt butter; add onion and jalapenos; saute. Add garlic, stir. Add flour, stir until bubbly; stir in milk, making sure to break up lumps, until mixture is slightly thickened. Add tomatoes and green chiles (if desired); stir well. Lower heat to very low; add cheese by 1/4-1/2 cupful, fully incorporating each addition before adding more. Stir in cilantro and sour cream; taste and add salt if necessary. Keep warm in crock pot or serve immediately with veggies and/or tortilla chips
